This wine originates from the Province of Treviso and is made from Pinot Bianco and Chardonnay grapes. It is cultivated using the Sylvoz method and has a yield of 11,000 kg per hectare. The grapes are harvested between August 25 and September 5. The vinification process involves white wine production through soft pressing, with primary fermentation conducted at controlled temperatures using selected yeasts. After pressing, the wine is aged for 4 to 6 months.
The wine has a straw yellow color and features a fine, persistent perlage. Its bouquet is both intense and delicate, while the taste is very dry and harmonious. It should be served at a temperature of 6 to 8°C. The sparkling effect is achieved using the Martinotti-Charmat method.
Spumante, which means “foaming” in Italian, is a type of Italian sparkling wine made from various grape varieties. Its characteristic effervescence comes from the addition of carbon dioxide. Spumante can range from sparkling white wines, made from grapes like chardonnay or pinot grigio, to sparkling pinot noir and even sparkling rosé.
Brut spumante, with less than twelve grams of sugar per liter, is a dry sparkling wine that is still sweeter (less dry) compared to extra brut. A sparkling wine with less sugar will taste sweeter than a still white wine with the same sugar level.
There are two methods for producing spumante. The traditional Champagne method, or “méthode champenoise,” involves fermenting the wine in the bottle. Alternatively, the Italian Martinotti-Charmat method (or simply Charmat method) involves a second fermentation in a barrel, which adds up to one percent more alcohol by volume (ABV)
