The grapes used for crafting this wine were all carefully selected and handpicked, prior to crushing and de-stemming them. Next, they were fermented in static potter type fermenters and pumped over frequently. After fermentation, the wine was subjected to extended maceration on skins in order to enhance the tannin structure. A portion of the wine was separately kept in a 2500 litre vat while the remaining wine was matured in one and two year old French hogsheads for 16 months.
Showing deep ruby red colours and purple highlights throughout, this splendid Abednego gives off scintillating aromas of raspberries, cherries, dark chocolate, cinnamon, and star anise from its nose. The lush and complex palate contains dark fruit and spice flavors, cut through by supple tannins that provide a rich and silky mouthfeel and a refreshing finale. This wine will benefit from careful cellaring up to 12 years and match perfectly with game meats like venison and duck.
