Winemaking: Harvested in the cool of the night, once fruit was showing rich f lavours and ripe tannins. After crushing the must is fermented on skins for 7 days before being pressed onto oak planks. Matured for 9 months, parcels are then selected by the winemaking team to craft the perfectly balanced wine.
